BOK CHOY KOOTU DHAL BOK CHOY WITH LENTILS

I have been cooking with bok choy (Chinese cabbage) for quite some time. I usually add them to noodles and soups. This time I tried making a simple dhal with bok choy. Bok choy has a very mild taste and blends well with the lentils and the spices added in the dhal. I do not add tamarind for my dhal preparations since we usually have this kind of dhal with rice and rasam. Tamarind juice can be added according to preferences.

INGREDIENTS:
1. Moong dhal, 1 cup.
2. Bok choy, 2-3.
3. Small onions, 1 cup.
4. Tomatoes, small, 2.
5. Chili powder, 1 teaspoon.
6. Coriander powder, 1 teaspoon.
7. Sambar powder, ½ teaspoon.
8. Garlic, 3 cloves.
9. Mustard seeds, 1 teaspoon.
10. Cumin seeds, 1 teaspoon.
11. Asafetida, 1 pinch.
12. Salt as per taste.
13. Turmeric powder, ½ teaspoon.
14. Curry leaves, 1 sprig.
15. Chopped cilantro, ¼ cup.

PREPARATION:
Wash the moong dhal and bok choy well. Extract thick juice from the tamarind and keep aside. Chop the bok choy and tomatoes into small pieces. Peel the onions and crush the garlic coarsely. Take a pressure cooker or a pressure pan and add 1 tablespoon of oil. When the oil is hot enough, add the mustard seeds and let it splutter. Then add the cumin seeds and asafetida let them fry for 30 seconds. Now add the small onions and curry leaves and sauté for a few minutes until the onions are transparent. I have left the onions whole here; they can also be diced and added. Now add the diced tomatoes along with the crushed garlic and bok choy and keep sautéing for a few minutes until the tomatoes are well mashed. Add 2 cups of water along with the moong dhal, turmeric powder, and all the powders, salt as per taste and pressure cook for about 10-15 minutes up to 3 whistles. Once the pressure is released, garnish with chopped cilantro, mix everything well, and serve hot with idlis, dosas, rotis, or rice.

What is homocysteine?
Homocysteine is an amino acid produced by the body, usually as a byproduct of consuming meat. Amino acids are the building blocks of all the proteins in the body. Homocysteine levels are measured in the blood by taking a blood sample. Normal levels are in the range between 5 to 15 micromoles (measurement unit of small amount of a molecule) per liter. 
Elevated levels are classified as follows:
  • 15-30 micromoles/liter - moderate
  • 30-100 micromoles/ liter - intermediate 
  • Greater than 100 micromoles/ liter - severe

Based on the available evidence, screening is recommended only for specific populations, which includes people with:
  • Family members who developed heart problems at a young age

How to reduce homocysteine levels?
Consumption of folic acid supplements or cereals that are fortified with folic acid, and to a lesser extent vitamins B6 and B12, can lower blood homocysteine levels. Usually, folate supplementation is recommended at 1 milligram daily; vitamin B6 is recommended at 10 milligram per day; and vitamin B12 at one-half milligram per day. Apart from that regular exercises, quitting smoking, alcohol and consumption of meat in moderation will also help to reduce homocysteine levels with the supplements.

In a large population study involving women, those who had the highest consumption of folic acid (usually in the form of multivitamins) had fewer heart attacks than those who consumed the least amount of folic acid. MUTTAI ATTU ADAI EGG PANCAKES



This is a favorite egg dish of my father-in-law and it has been in the family for many generations. It seems that my father-in-law’s mom used to prepare this as a side dish with rice for lunch quite often and she used to mix duck eggs along with chicken eggs when she prepares these adais to add some richness to the dish. Adding channa dhal flour to the eggs is used for increasing the volume and stretching the buck during those days. Now-a-days we see this as a healthy protein-rich evening snack. The eggs can also be substituted with Egg Beaters or plain egg whites.

INGREDIENTS:
1. Eggs, 3.
2. Onion, medium size, 1.
3. Green chilies, 2-3.
4. Ginger—garlic paste, ½ teaspoon.
5. Roasted channa dhal or chutney dhal (pottukadalai or udaicha kadalai) , 2 tablespoons.
6. Salt as per taste.
7. Curry leaves and cilantro for garnishing.

PREPARATION:
Grind the roasted channa dhal into a fine powder. Dice the onions and green chilies finely. Heat a pan with some oil. When oil starts to bubble add the diced onions and green chilies along with 2-3 curry leaves and ginger-garlic paste and sauté for a few minutes until the onions are tender and let it cool. Break the eggs into a bowl and beat them along with the sautéed onion mixture, channa dhal powder, salt, and a tablespoon of chopped cilantro. Heat a thick-bottomed pan or a kadai with a tablespoon of oil and once the oil is hot, ladle the egg mixture into the pan. Cook closed for 4-5 minutes under medium flame until the corners get crisp, and flip it to the other side. Cook for another 2 minutes until that side also turns brown and crisp. Repeat the process with the remaining batter and serve hot with ketchup or as a side dish with rice.

VARIATION: Half a teaspoon of fennel seeds can also be powdered along with the channa dhal for much tastier and flavorful adais.

Cancer a nutritional deficiency

Proper nutrition is the key factor to stay healthy. Majority of the health problems are due to poor nutrition. Even cancer can be included as a disease due to nutritional deficiency. Many of my friends may not be agree with me on this conclusion. But it’s a fact as proved by Dr Warburg and Dr Budwig.
In 1928 Dr Warburg was awarded Noble prize for his research that proved “lack of Oxygen absorbing capacity of  cells is the root cause of the cancer”. In absence of Oxygen, Cancer cells respire by anaerobic method and lactic acid is formed.  Dr. Johanna Budwig a German biochemist, Cancer Research Scientist and Physicist explained as why our healthy cells become anaerobic and she finally found the Warburg’s unknown fats. Those were Linolenic  and Linolenic acid.
Dr. Budwig found that the blood of seriously ill cancer patients was deficient in certain important essential ingredients which included Linolenic acid,  phosphatides and lipoproteins. while the blood of a healthy person always contains sufficient quantities of these essential ingredients.

According to Dr Budwig,  Our body is electric and therefore the cells of our body fire electrically. They have a nucleus in the centre of the cell which is positively charged, and a cell membrane, which is the outer lining of the cell, is negatively charged. In growing new cells, there is bipolarity between the electrically positive nucleus and the electrically negative cell membrane with its high unsaturated fatty acids. During cell division the cell and new daughter cell must contain enough electron rich fatty acids in the cells surface area to divide off completely from the old cell. In tumours. Due to unsaturated fat, the course of growth is disturbed---the surface-active fats are not present; the substance becomes inactive before the maturing and shedding process of the cells ever takes place, which results in the formation of tumors. 
A regular consumption of white refined sugar, as in soft drinks (1 soft drink contains up to 10 teaspoons of white refined sugar), chips (crisps), store bought pastries, deep fried foods (French fries, donuts). Also prepared meats (hot dogs, sausages, bacon, ham) fast foods, food additives, etc. Most foods are cooked at 350 to 400 F, but whenever we cook our food over 105 F (40 Celsius) instead of steaming our foods, we destroy many of the important enzymes. As well as refined oils and processed foods, toxins, stress and other factors, our body suffers from a mineral deficiency which causes an unbalanced chemistry, which will alter the instructions of the DNA when producing new cells. 
Dr Budwig discovered that when unsaturated fats have been chemically treated that their unsaturated qualities are destroyed and the field of electrons removed. Part Three-Exercises for fat loss

What burns calories nonstop is actually the lean muscle mass underneath body fat that allows more intake of calories without weight gain. The body actually adapts to the changes it undergoes. Losing weight without exercising (only based on crash dieting or starvation) increases the risk of losing lean body mass, slowing the metabolism and putting the body into fat-storing mode. So to lose weight and belly fat and to enhance your overall health, exercises are necessary. If a special diet plan, a pill promises to help you burn stomach fat fast, its a lie, no matter which celebrity says it works. Remember! To lose weight, Diet plan and exercises are necessary.
Research shows that interval training or alternating short bursts of energy with brief resting periods can improve muscle and build endurance more quickly than traditional exercise. In fact Abdominal crunches and sit-ups should build strong muscles, but you might not see them much under belly fat. Youll need to do all sorts of exercises, in moderation, including weight bearing exercises, like brisk walking, jogging, and the like. Weight bearing and non-weight bearing exercises, combined with weight training and cardio, and some yoga thrown in for good measure, will give you a lifetime of fitness and good health. You absolutely cannot isolate one set of muscles and lose fat just in that one spot. Exercise in the morning. It burns more calories than any other time of the day.
Now let’s talk some stomach exercises:

  • Bridge-
    Get into the position for doing a push up. Rest on your elbows with eyes on the floor. Pull your stomach muscles in tight, imagining them going to your backbone, your bottom should be down and your back straight. Stay at this position till comfortable. During this period, keep your back straight as much possible. You may allow your knees to form a resting platform, it it feels too hard. Aim to hold the position for 30-45 seconds and repeat this exercise 3 to 5 times.

  • Side stretching-
    Stand up straight, with your feet hip-width apart. Put your right hand on your right hip, and lift your left arm straight up, so that your palm faces to the right. Keeping your legs cantered, lean to the right and "reach" over with your left arm, stretching your left side. Do 3 to 5 times on each side.







  • Vertical Leg Crunch -
    Performing this exercise is similar to doing a leg crunch except that the legs are straight up, forcing the abs to work and adding intensity to the routine. To do this, lie on the floor with the legs straight up, knees crossed, and place the hands beneath the head for support. Contract abs lifting the shoulders off the floor and keep legs in a fixed position to crunch. Do 1 to 3 sets with 12 to 16 repetitions.







  • Long Arm Crunch -
    This is a variant of the traditional floor crunch where the arms are held straight behind you, adding a lever to the move and making for a challenging exercise. To do this, lie on the floor or a mat then extend arms straight behind, keeping them clasped and next to the ears. Slowly contract abs and lift shoulders off the floor carefully to keep the arms straight. Do 1 to 3 sets with 12 to 16 repetitions.

  • The Bicycle Exercise -
    best for targeting the six pack muscles and the obliques. To do this exercise, get into a supine position with hands at the back of your head. Bring knees to the chest while lifting shoulders off the floor. Slowly bring your right elbow towards your left knee as you straighten your right leg. Switch sides and continue in a pedaling motion. Do 1 to 3 sets with 12 to 16 repetitions.

  • The Captains Chair Leg Raise -
    This exercise requires a captains chair, a rack with padded arms allowing for the legs to hang free that is commonly found in gyms or health clubs. To do this exercise, stand on the chair and grip hand holds. Press back against the pad then raise knees to the chest to contract the abs then lower them back down. Do 1 to 3 sets with 12 to 16 repetitions.






  • Exercise Ball Crunch -
    For this exercise, an exercise ball is necessary. In this routine, the abdomen does more exerting but will still need the entire body to stabilize it throughout the routine. To do this exercise, lie on the ball with your lower back fully supported. Place hands behind the head. To lift the torso off the ball, contract the abs to pull the bottom of the rib cage towards the hips. Keep ball stable as you curl up, then lower back down to stretch the abs. Do 1 to 3 sets with 12 to 16 repetitions.


cardios : Anything that makes your heart pound hard, like jogging, aerobics, dancing etc. Here are some:-
  1. Sprint. Run as fast and as far as you can for 20 seconds, then slow to a walk until you catch your breath. Repeat for 10 minutes.
  2. Set a treadmill, elliptical or stationary bike for interval training. Most modern exercise equipment can be set to an interval training mode, which significantly increases the difficulty of the exercise for short periods of time.
  3. Take quick walks. Fit some exercise into your work day and take 5-minute power walks. Take long strides and keep a brisk pace, or try going up and down stairs.

Dont overdo it. When first getting into cardio, aim to workout 20 minutes, 3 days a week, then build up to 4 when youre able. Pushing yourself hard every day doesnt allow your body enough time to recover and build up muscle, and could lead to injury.

Part four- Measure your progress

Keep records of measurements of waist to hip ratio, your weight, a photo of you before the programme, your old jeans, your stamina and your visual mirror looks. Check them and compare with new results every week. It’s great to keep you motivated. But don’t rely on the scale too much. After a couple of weeks you might find that youre not losing weight or inches anymore. Dont give up! Thats just a plateau, a sign your body is adjusting to all of the positive things youre doing. Also may be your body losing fat but developing lean muscle. So keep going! Youre getting there.  You are now much closer to losing all that stomach fat.

Because of this, premenopausal women generally have lower rates of heart disease than men. After menopause, as estrogen levels decline, women catch up in their rates of heart disease. 
Genetic Factors and Family History
Genetics play a vital role in determining a persons blood cholesterol levels. Genes may influence whether a person has low HDL levels, high LDL levels, high triglycerides, or high levels of other lipoproteins.
However you need to change your diet and lifestyle to lower cholesterol and your risk of heart disease. Even if your doctor prescribed a cholesterol drug to bring levels down, youll still need to change your diet and become more active for cardiovascular health.
Most people eat super-sized meals, with portions that are twice the size recommended for good health or have regular eating habits. That can contribute to weight gain and high cholesterol.
Heres an easy way to practice portion control for a meal: Use your hand. One serving of meat or fish is about what fits in the palm of your hand. One serving of fresh fruit is about the size of your fist. And a serving of cooked vegetables, rice, or pasta should fit in your cupped hand. Not only at home, dont blow it when you eat out. Restaurant food can be loaded with saturated fat, calories, and sodium. Choose broiled, baked, steamed, and grilled foods -- not fried. Here are some tips to lower your cholesterol level quickly, which you have to include in your daily life:
Whole Grains
We need carbohydrates but some are better. Whole grains, such as brown rice, whole-wheat and beans have complex carbohydrates and more fibre and raise sugar levels less. These help lower cholesterol and keep us feeling full longer. They also help reduce LDL "bad" cholesterol and can be an important part of your weight loss strategy. Other examples of whole grains include wild rice, popcorn, brown rice, barley, and whole-wheat flour.
Other carbs, like those found in white bread, white potatoes, white rice, and pastries, boost blood sugar levels more quickly, leading you to feel hungry sooner, and may increase your calorie intake.
Fruits and vegetables
Not to mention, eat plenty of fruits and vegetables -- five to nine servings a day -- to help lower LDL "bad" cholesterol. Antioxidants in these foods may provide the benefit. Or it may be that when we eat more fruits and veggies, we eat less fatty foods. Foods enriched with plant sterols, such as some margarine spreads, yogurts, and other foods, can also help lower LDL cholesterol.
Fishes
Fish is low in saturated fat and high in healthy omega-3 fatty acids. Omega-3 fatty acids help lower levels of triglycerides, a type of fat in the blood. They may also help lower cholesterol, slowing the growth of plaque in arteries. Just dont drop the filets in the deep fryer -- youll negate the health benefits.
Nuts for Cardiovascular Health
Nuts are high in monounsaturated fat, which lowers LDL "bad" cholesterol while leaving HDL "good" cholesterol intact. Several studies show that people who eat about an ounce of nuts a day have lower risk of heart disease. Nuts are high in fat and calories, so only eat a handful. And make sure theyre not covered in sugar or chocolate.
Unsaturated Fats
We need a little fat in our diet -- about 25% to 35% of our daily calories. But the type of fat matters. Unsaturated fats -- like those found in canola, olive, and mustard oils -- help lower LDL "bad" cholesterol levels and may help raise HDL "good" cholesterol. Saturated fats -- like those found in butter and palm oil -- and Trans fats raise LDL cholesterol. Even good fats have calories, so eat in moderation.
Avoid animal fat
Animal fats are complex mixtures of triglycerides, with lesser amounts of phospholipids and cholesterol. As a consequence, all foods containing animal fat contain cholesterol to varying extents. Major dietary sources of cholesterol include egg yolks, beef, pork, poultry and milk and its products. So to lower the cholesterol levels, avoid animal flesh and use only skimmed milk and product.
Drink plenty of Water
Do not underestimate water. If we dont have an adequate amount of water in our bodies each day, organs cannot properly operate (including the kidneys, which remove excess cholesterol) and our body functions are slowed (including the removal of excess cholesterol from arteries).
Since we excrete excess fluids from our body throughout the day, water must be replenished daily, regardless of our water intake the day before, if we want our bodies to function well.
Exercise
Even 30 minutes of physical activity five days a week can help lower LDL cholesterol and raise HDL cholesterol -- although more exercise is even better.
